Errol Clay runs two businesses that both deal in what people need to get through hard weeks, and he doesn't see much distance between them. He is a licensed Texas funeral director, trained in mortuary science after growing up trailing his own pastor father into funeral homes. He is also the founder and lead pastor of Flavor Church in Sugar Land, a nondenominational congregation built on a single, sustained metaphor: spiritual nourishment as food. Join the church and you become part of what Clay calls the Flavor Family.

That metaphor isn't decoration sitting on top of ordinary sermons.

It's structural. Clay has put dozens of releases on Bandcamp, most of them live recordings pulled straight from services, credited to Chef Pastor Errol Clay. Titles read like a menu with a message: BABY FOOD & SNACKS, CHRIST FOOD, FIRE-GRILLED CHICKEN. The joke is the hook. What holds attention once you're in is how Clay uses comedy to carry material that isn't funny at all. Can Eating Skittles Kill U?, a 2013 spoken-word piece, takes a taunt used around the killing of Trayvon Martin and turns it into an indictment. Marinating in Misery, its cover art showing a Bentley half-submerged in floodwater, reads as a direct response to the flooding that hit the Houston area in 2012. Hungry Enough To Call Daddy!! arrives as a Valentine's Day sermon in which daddy, inevitably, is Jesus.

The theology underneath all of it is plain enough to fit on a fridge magnet: God is the one person who can help you any day. What makes Clay worth hearing is the language he wraps around that plainness — "positioned for possession," "sweet and supernatural day of deliverance," and his own recurring name for God, Papa God. It's preaching built for repetition, phrases designed to be carried out of the room and used again.

A drummer since childhood by his own account, Clay brings a rhythm section's sense of timing to his delivery, and it shows. These recordings don't land like sermons overheard from the back pew. They land like a seat pulled up to the table.
